Walnut macaroon sticks

Ingredients for 1 servings:

  • 4 egg whites
  • 250 g sugar
  • 350 g ground walnuts
  • 1 tbsp jelly (rhubarb jelly) or other sour
  • Chocolate coating as desired

Instructions

great for protein utilization, makes about 70 pieces

Preheat oven to 175°C. Heat the egg whites and sugar in a bowl over a pan of hot water to approximately 50°C. Whisk until creamy. Remove from the water bath and stir the jelly and nuts into the mixture. Depending on the size of the egg whites, you may need to add a few more nuts. Transfer the mixture to a piping bag fitted with a large nozzle (1.5 cm) and pipe small sticks, approximately 4 to 5 centimeters in diameter, onto a baking sheet lined with baking paper. Bake at 175°C for 10 to 11 minutes, until the sticks are light brown. Once cooled, decorate with chocolate coating as desired.
