Finely dice the chorizo and place it in a small saucepan with the crushed garlic cloves, bay leaves, thyme, and rosemary. Pour in the olive oil and heat gently, but do not boil. Let it simmer for 20 minutes, until the oil releases a strong aroma. Then remove the herbs, let the oil cool with the sausage pieces, and store in a screw-top jar. You can make the chorizo oil in advance. You can use it for frying, as salad oil, etc. Your imagination is the limit.
