Ingredients for 1 servings:
- 100 g butter
- 150 g sugar
- 2 eggs
- 200 g yogurt
- 1 orange(s), peel and juice
- 150 g desiccated coconut
- 150 g flour
- 2 tsp baking powder
- 3 tsp orange marmalade
- 2 tsp water
- n. B. Desiccated coconut

fruity – exotic coconut muffins
Grease the muffin tin and refrigerate, or line with paper baking cups. Preheat the oven to 190°C (top/bottom heat). For the batter, cream the butter and sugar until fluffy. Beat in the eggs. Combine the desiccated coconut, flour, baking powder, and orange zest, then quickly stir in along with the yogurt and orange juice. Pour into the prepared tins and bake in the preheated oven on the middle rack for about 25 minutes. Let cool. Bring the orange marmalade and water to a boil, brush the muffins with it, and sprinkle with desiccated coconut.
