Minced meat and apple skewers

Ingredients for 4 servings:

  • 750 g potatoes (floury)
  • Salt
  • 1 onion(s)
  • 300 g minced meat, mixed
  • 1 egg(s)
  • 1 tbsp breadcrumbs
  • pepper
  • Paprika powder (sweet)
  • 2 apples
  • 12 slices of bacon
  • Oil for the skewers
  • Clarified butter
  • 150 g whipped cream
  • 100 ml meat broth (instant)
  • 200 ml milk
  • 1 tbsp butter

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel, wash, and quarter the potatoes and cook in salted water for about 20 minutes. Meanwhile, peel and finely dice the onion. In a bowl, combine the minced meat with the onion, egg, and breadcrumbs. Season with salt, pepper, and paprika. Form the mince mixture into 24 meatballs. Wash, trim, and eighth the apples. Cut the bacon into approximately 5 cm wide pieces. Thread the bacon, apples, and meatballs alternately onto oiled skewers. Heat the lard in a pan and fry the skewers for 5 minutes on all sides. Remove from the pan and keep warm. Deglaze the pan juices with cream and stock and simmer for another 2-3 minutes. Heat the milk. Drain the potatoes, mash them, mix with butter and milk, and season with salt. Drizzle the skewers and mashed potatoes with the sauce. Serve garnished with lettuce and cress, if desired.
