Plum cake with a delicate marzipan note

Ingredients for 1 servings:

  • 375 g butter
  • 550 g flour
  • 275 g sugar
  • 200 g marzipan paste
  • 70 g ladyfingers
  • 1 ½ kg plum(s)
  • 1 packet of vanilla sugar
  • 4 m.-sized eggs
  • 1 packet of baking powder
  • 100 ml milk
  • Fat, for the tray
  • Flour, for the baking sheet

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Knead 125g butter, 200g flour, and 100g sugar into crumbles, then chill. Grate the marzipan, finely grind the sponge fingers, and halve and pit the plums. Cream together 250g butter, 175g sugar, marzipan, and vanilla sugar until creamy. Stir in the eggs one at a time. Mix 350g flour, sponge fingers, and baking powder, then stir in alternately with the milk. Grease and flour a roasting pan, or use baking paper. Spread the batter onto the pan and top with the plum halves, cut edge facing up. Sprinkle with crumbles. Bake in a preheated oven (electric oven: 175°C/fan: 150°C/gas mark 2) on the middle rack for 35-45 minutes. Serve with whipped cream.
