Apple cake with almond meringue topping

Ingredients for 1 servings:

  • 200 g butter, soft
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 4 tbsp milk
  • 225 g flour
  • 50 g cornstarch
  • 2 tsp, heaped baking powder
  • 3 tbsp rum
  • 750 g apples, cleaned and peeled
  • 50 g sugar
  • ½ lemon(s), organic
  • some cinnamon powder
  • 100 g almonds, chopped or ground
  • 100 g sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For a 28cm springform pan

Cream the softened butter with 100g of sugar and vanilla sugar until fluffy. Separate the eggs. Gradually beat the egg yolks into the butter mixture. Grate the lemon zest and add it. Mix the flour with the cornstarch and baking powder and fold it into the batter along with the milk. Preheat the oven to 200°C. Thinly slice the apples and marinate them with the rum, 50g of sugar, cinnamon, and lemon juice. Line a springform pan with baking paper and spread the batter on it. Top with the apple slices. Bake on the middle rack at 200°C for about 20-30 minutes. Beat the egg whites with 100g of sugar until stiff peaks form. Stir in the almonds. Spread the almond powder over the apple pie and finish baking.
