Vanilla curd with berry sauce

Ingredients for 4 servings:

  • 400 g berries, fresh or frozen, strawberries, raspberries, currants, blueberries or whatever you like
  • 1 packet of vanilla sugar
  • 500 g low-fat curd cheese
  • 5 tbsp milk
  • 1 packet of Bourbon vanilla sugar
  • 2 tbsp, levelled sugar
  • e.g. powdered sugar

Preparation of the berry sauce: Rinse the fresh berries, drain on kitchen paper, and remove the stems. Frozen berries are best thawed at room temperature or, if you’re in a hurry, briefly microwave them. Set aside a few whole berries for decoration. Puree the remaining berries with vanilla sugar. If the berries aren’t sweet enough, add a little sugar. Preparation of the vanilla curd: Mix the curd with the milk and vanilla sugar until smooth and season to taste. Finally, divide the cream into serving glasses, fill with the berry sauce, and garnish with the reserved berries. If you like, sprinkle over some powdered sugar and serve. Tips and hints: You can also keep it in the refrigerator for 1-2 days. As an alternative to berries, you can also layer cream, applesauce, cream, etc. This is also very tasty. A super easy-to-prepare dessert that’s quick and easy to make if you have spontaneous visitors or just fancy something sweet.
