Pork fillet in puff pastry

Ingredients for 4 servings:

  • 1 pack of puff pastry
  • 600 g pork fillet(s)
  • salt and pepper
  • 1 tbsp mustard, medium hot
  • n. B. herbs, chopped
  • 2 tbsp oil
  • 1 egg yolk

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Heat the oil in a pan and sear the meat on all sides until golden brown, then season lightly with salt. Preheat the oven to 200°C (top/bottom heat). Line a baking tray with baking paper. Unroll the puff pastry. Mix the mustard and herbs into a filling and spread it on the puff pastry. Wrap the fillet in it, folding in the sides and pressing down. Place seam-down on the baking tray. Beat the egg yolk and brush it over the surface. Bake in the center of the oven for 25 minutes (no fan). Let rest for 5 minutes before slicing.
