Quick muffins with or without fruit

Ingredients for 1 servings:

  • 125 g spelt flour
  • 125 g wheat flour
  • 3 tsp baking powder
  • 5 tbsp chocolate shavings or desiccated coconut, ground nuts,…
  • 125 g butter
  • 125 g sugar
  • 1 pinch of salt
  • 1 tbsp vanilla sugar
  • 3 eggs
  • 4 tbsp milk
  • 1 jar of cherry(s), drained or 300 g of fruit (e.g. apples, raspberries, pears, …)
  • e.g. powdered sugar
  • Paper cups

Instructions

Working time approx. 7 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 27 minutes

Quick, delicious (fruit) muffins with many variations, makes 12 pieces.

Combine both flours, baking powder, and chocolate shavings in a bowl. Then add the butter, sugar, salt, vanilla sugar, eggs, and milk. Mix for 2 minutes on low speed, then on medium speed. Then transfer everything to paper baking cups. Wash, trim, and slice the fruit, and place it on top of the batter. Place the baking cups on a baking sheet and bake in the oven for approximately 15–20 minutes at 175°C (top/bottom heat). You can also place the baking cups in a muffin tin. Do the toothpick test, remove the finished muffins from the oven, and let them cool. Dust the cooled muffins with a little powdered sugar.
