Potato waffles with pear and apple sauce

Ingredients for 10 servings:

  • 300 g boiled potatoes
  • 4 eggs
  • 40 g sugar
  • 100 ml milk
  • 50 g low-fat curd cheese
  • 50 g potato starch
  • 100 g wheat flour
  • 2 tbsp oil for frying
  • 2 apples
  • 2 bulb(s)
  • 1 tbsp brown sugar
  • 100 ml cider or apple juice
  • 1 tbsp honey
  • n. B. Icing sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

First, peel and quarter the pears and apples, remove the cores, and cut the flesh into small cubes. Melt the sugar in a saucepan, let it caramelize slightly, and then deglaze with the cider or apple juice. Add the fruit, cover, and simmer for 15 to 20 minutes. Finely purée any remaining chunks with a hand blender, or simply leave them as they are. Peel the cooked potatoes and press them through a ricer. Beat the eggs and sugar until frothy, then stir in the potatoes, milk, quark, and flour. In a heated and greased waffle iron, bake one waffle at a time until golden brown. Dust with powdered sugar and serve with the pear and apple sauce.
