Bean salad with bacon and onions

Ingredients for 4 servings:

  • 2 cans of beans (young green beans)
  • 1 vegetable onion(s)
  • 150 g bacon
  • ½ bunch parsley
  • 2 tbsp olive oil
  • 8 tbsp white wine vinegar
  • 100 ml vegetable stock
  • salt and pepper
  • some sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the beans in a sieve and drain. Peel the onion and dice finely. Dice the bacon or buy it already diced. Wash the parsley and finely chop or mince it. Heat the oil in a pan and sauté the bacon and onions. Deglaze with the white wine vinegar and stock. Then let it cool slightly. Meanwhile, transfer the beans to a salad bowl. Add salt, pepper, and sugar; stir. Then add the ingredients from the pan. Mix and let it stand for half an hour. Serve with fresh, lightly toasted white bread from the oven.
