Garlic dip

Ingredients for 1 servings:

  • 1 medium egg yolk
  • ½ garlic clove(s)
  • 1 tsp, heaped tomato paste
  • 1 tsp mustard
  • 1 tsp white wine vinegar, milder
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • 2 tbsp sugar
  • 1 tsp, heaped salt
  • 1 tsp, heaped dill, dried
  • Rapeseed oil
  • possibly water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Combine all ingredients except the oil in a tall container. Add the garlic clove, coarsely chopped if desired. Add a small splash of water. Briefly puree everything with a hand blender. Then add the oil. Start with a small splash, then blend everything, gradually adding more oil, blending occasionally. Continue until the mixture begins to thicken and reaches the desired consistency (should be similar to mayonnaise). Season to taste. The dip tastes best when it has been refrigerated for a few hours. I make this mayonnaise often and enjoy it with fries or pizza rolls.
