Sausage-Limburger salad a la Bärchen

Ingredients for 2 servings:

  • 200 g cheese, Limburger, any fat content, mature, soft
  • 300 g meat sausage
  • 3 m.-large tomato(s)
  • 2 m.-large cucumber(s), sour
  • Balsamic vinegar
  • olive oil
  • pepper
  • 1 iceberg lettuce, cut into fine strips
  • Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Cut the Limburger, pork sausage, tomatoes, and cucumbers into small pieces/dice and toss with balsamic vinegar, a little olive oil, and plenty of pepper to taste. Cover and let marinate at room temperature for about 30 minutes. If you prefer a saltier dish, add more salt—but this isn’t usually necessary. Arrange the iceberg lettuce in a bed on two plates, pile the sausage and cheese salad on top. Drizzle some of the resulting marinade over the salad. Serve with white bread or pretzels and butter.
