Fried egg on braised kohlrabi leaves

Ingredients for 2 servings:

  • 2 handfuls of kohlrabi leaves, from 2 – 4 kohlrabi leaves, depending on the number of leaves
  • ¼ sausage (knackwurst)
  • 1 onion(s)
  • 1 tsp vegetable broth
  • 2 tomatoes
  • salt and pepper
  • Sunflower oil
  • 1 jar water
  • 4 eggs
  • Paprika powder
  • possibly basil or chives for garnishing

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the kohlrabi leaves and then cut them into small diamond shapes. It’s important to remove the stalk, as it’s quite hard. Also cut the onion, tomatoes, and sausage into small pieces. Sauté the kohlrabi leaves, sausage, and onion in sunflower oil. As soon as the kohlrabi leaves turn dark green, add the tomatoes and vegetable stock. Simmer for a short time, then deglaze with water. Then fry the fried eggs together in a pan and season with pepper, salt, and paprika. Place the braised kohlrabi leaves in a soup plate and layer the fried egg on top. Garnish with basil or chives, if desired.
