Ingredients for 4 servings:

  • 500 g plum(s) or damsons (firm)
  • 1 vanilla pod(s)
  • 100 g biscuit(s) (e.g. cantuccini, amaretti or speculoos)
  • 1 tbsp balsamic vinegar
  • 4 tbsp powdered sugar
  • 2 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

great as a side dish to ice cream

Pit the plums and cut into wedges. Scrape the seeds from the vanilla pod. Crumble the biscuits. Heat the butter in a pan and stir in the powdered sugar and vanilla pod seeds. Once the sugar melts, add the plums and deglaze with the vinegar. Add the biscuit crumbs and let them simmer for 2 to 3 minutes. This goes well with vanilla ice cream or pudding.
