Gooseberries with vanilla cream

Ingredients for 4 servings:

  • 1 jar gooseberries
  • 1 cup of cream
  • 1 pack of pudding powder, vanilla, no cooking

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Drain the gooseberries, reserving the juice. Place the gooseberries in a bowl. (A glass bowl is especially nice.) Whip the cream. Prepare the vanilla pudding according to the package instructions, but use the reserved gooseberry juice instead of the milk. If there’s still more liquid, add water until the amount is just right. Fold in the whipped cream. Pour the mixture over the gooseberries. Refrigerate.
