Spinach patties with cheese

Ingredients for 4 servings:

  • 1 package creamed spinach, frozen
  • 4 eggs
  • 1 package of cheese, for gratinating
  • breadcrumbs
  • salt and pepper
  • 1 tbsp potato starch

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Thaw the spinach in a sieve. In a bowl, combine the drained spinach, eggs, cheese, starch, and breadcrumbs. Add the breadcrumbs and starch to taste until you get a firmer mixture. Season to taste with salt, pepper, and other spices (e.g., nutmeg or garlic). Briefly fry in a pan until browned to your liking. I use a large spoonful of mixture for each patty and press it into shape in the pan. Serve with salad, mashed potatoes, or fried potatoes. Herby curd cheese is also delicious.
