Ingredients for 1 servings:
- 250 g pumpkin flesh
- 225 g flour
- 1 tsp baking powder
- 1 tsp baking soda
- 125 g sugar
- ¼ tsp nutmeg
- ¼ tsp ginger
- 1 pinch of salt
- 6 tbsp oil
- 2 eggs
- 125 g sour cream
- 100 g flour
- 60 g sugar
- 1 tsp cinnamon powder
- 50 g butter

Preheat oven to 200°C (top/bottom heat) or 170°C (fan). Clean and deseed the pumpkin, remove any coarse fibers, finely grate, and weigh 250g. Now prepare the crumble and set aside. Combine the dry ingredients and spices in a bowl. In a second bowl, whisk the sugar, eggs, oil, and sour cream together and fold in the grated pumpkin. Quickly combine the wet ingredients with the flour mixture and fill 2/3 of the muffin batter into greased muffin tins. Spread a teaspoon of the crumble mixture over the batter. Bake muffins for about 25 minutes.
