Mascarpone berry cream with amaretti biscuits

Ingredients for 1 servings:

  • 500 g mascarpone
  • 250 g cream
  • 750 g red fruit compote
  • 1 ½ handfuls of biscuits (Amarettini)
  • 4 cl Amaretto
  • 100 g sugar
  • e.g. mint or lemon balm

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Layered dish

Whip the cream with the sugar until stiff, then stir in the mascarpone and amaretto. Reserve 4 amaretti biscuits for decoration and crumble the rest. Then fill tall glasses in layers (cream, fruit compote, amaretti crumbs). The last layer should be cream. Refrigerate the glasses for half an hour. Garnish each with an amaretti biscuit, perhaps with mint or lemon balm. Tip: Don’t worry if the cream seems too thin; it will thicken in the refrigerator. This can also be prepared the night before.
