Ingredients for 4 servings:
- 1 kg potatoes
- 750 g apples
- 2 onions
- 400 g meat sausage (ham)
- 6 large gherkins
- 1 tsp salt
- 1 pinch(s) of pepper
- 1 pinch of nutmeg
- 1 bunch of parsley
- 1 tbsp butter
- ¼ liter of milk
- 100 g sugar

Mashed potatoes with garnish and apple compote
Peel the potatoes, cut into small cubes, and boil with salt until tender. Meanwhile, peel and finely chop the onions. Cut the bologna into approximately 1 cm cubes, drain the cucumbers and chop them slightly smaller. Finely chop the parsley. Peel and chop the apples, and simmer with the sugar for about 10 minutes until the compote becomes tender. Drain almost all of the cooked potatoes, add the butter, milk, a little more salt, pepper, and nutmeg, and mash until a nice mash forms. Add the bologna, cucumbers, onions, and parsley to the mash, stir, and serve with the warm apple compote.
