Spaghetti with creamy hummus sauce

Ingredients for 8 servings:

  • 1 kg spaghetti
  • 500 ml hummus
  • 5 small onions
  • 1 kg leaf spinach, frozen
  • 3 lemon(s), zest and juice
  • 1 bunch of basil
  • e.g. salt and pepper
  • n. B. spice(s)
  • 400 ml water (pasta water)
  • 2 cloves garlic

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook pasta al dente according to the package instructions. Reserve 400 ml of the pasta water when draining. Meanwhile, finely slice the onion into half rings, slice or press the garlic, depending on your taste, and sauté in a pan. Add the spinach leaves and heat through. Add the hummus and pour in the lemon juice and pasta water until a creamy sauce forms. Stir in the lemon zest and season with salt, pepper, and any other spices to taste. Chop the basil and stir in just before the end. Mix the cooked pasta well with the sauce.
