Dragon's baked parasol mushrooms

Ingredients for 2 servings:

  • 8 mushrooms (parasol)
  • 100 g flour
  • 2 eggs
  • salt and pepper
  • 70 g breadcrumbs
  • 30 g grated cheese (e.g. Edam, Emmental, Gouda)
  • 3 tbsp, heavy cream
  • some chives, in rolls
  • Fat for the deep fryer or pan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the stems from the mushrooms. Don’t wash the caps, just brush them lightly. Remove any needles or small insects from the gills. Whisk the eggs with cream, salt, chives, and a little pepper. Coat the mushrooms first in flour, then in the beaten egg. Mix the breadcrumbs with the cheese and coat the mushrooms in the flour. Fry in hot oil for 2 to 3 minutes on each side until crispy. Serve with a green salad and tartar sauce. Of course, you can also omit the cheese and use only breadcrumbs for the coating.
