Cheese and mushroom slices

Ingredients for 4 servings:

  • 500 g mushrooms, fresh
  • 1 tsp lemon juice
  • 1 large onion(s)
  • 2 garlic cloves
  • 10 g butter
  • Salt and pepper, white
  • 1 tbsp basil, chopped
  • 2 tbsp crème fraîche
  • 4 slices of white bread, approx. 150 grams
  • 100 ml white wine
  • 200 g cheese, raclette cheese, in 4 slices
  • Paprika powder, mild

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the mushrooms, slice coarsely, and immediately drizzle with lemon juice. Peel and finely chop the onion and garlic, and sauté briefly in the butter. Add the mushrooms, continue to cook, season, and add the basil. Thicken the resulting jus with the crème fraîche. Preheat the oven to 230°C (450°F). Place the bread slices side by side in a large or two medium-sized gratin dishes, drizzle with the wine. Spoon the mushroom mixture onto the bread, place the raclette slices on top, and sprinkle with paprika and pepper. Place the gratin dish in the upper third of the oven and bake for about 10 minutes. Serve with a crisp, fresh salad.
