Ingredients for 4 servings:
- 4 slices of boneless smoked pork (approx. 150 g each)
- 3 tbsp oil
- 750 g potatoes
- 300 g leek
- 300 g carrot(s)
- 450 g apples
- 300 ml vegetable stock
- 1 bunch of chives
- 200 g sour cream
- salt and pepper
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes
Wash, peel, and slice the carrots. Set aside. Wash, trim, and slice the leek. Add to the carrots. Peel and wash the potatoes, cut into thin wedges, and set aside. Wash, quarter, core, and slice the apples into thin wedges, and set aside. Heat the oil and fry the smoked pork slices in the hot oil for 3 minutes on each side. Remove and set aside. Fry the potatoes in the remaining frying fat for 5 minutes on all sides. Then add the carrot slices and leek rings and sauté for 2 minutes. Add the vegetable stock and simmer everything for 10 minutes. Meanwhile, wash and trim the chives, pat them dry, and cut into rolls. Mix with the sour cream and season with salt and pepper. After 10 minutes, add the apple slices to the potato and vegetable mixture and braise for another 3 minutes. Add the smoked pork slices and heat through. Season with salt and pepper. Arrange the smoked pork slices and vegetables on plates. Serve with the chive cream.
