Mandarin muffins

Ingredients for 1 servings:

  • 1 can mandarin(s), drained weight 175 g
  • 200 g wheat flour
  • 2 tsp, leveled baking powder
  • 125 g sugar
  • 1 pack of orange peel
  • 100 g butter or margarine, soft
  • 2 m.-sized eggs
  • 2 tbsp milk
  • e.g. powdered sugar

Working time approx. 10 minutes; Total time approx. 10 minutes

super quick, easy and super delicious, for 12 muffins

Drain the mandarins well in a sieve. Combine the flour and baking powder and sift into a mixing bowl. Add the sugar, orange zest, butter, eggs, and milk. Using the whisk attachment on a hand mixer, mix briefly on the lowest speed, then on the highest speed for 2 minutes until a smooth batter forms. Fold in the mandarins and divide the batter between 12 baking cups. Bake in a preheated oven at 180°C for about 15 minutes. Let the muffins cool on a wire rack and dust with powdered sugar, if desired.
