Ingredients for 1 servings:

  • 50 g butter, soft
  • 1 packet of vanilla sugar
  • 70 g sugar
  • 80 g flour
  • 1 tsp, leveled spice mix (cookie spice “Ginger & Bread” by Herbaria)

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

For the dough, cream together the butter, sugar, and vanilla sugar until fluffy, then add the eggs while whisking. Add a few drops of lemon flavoring. Sift the flour, if possible, and gradually add it along with the biscuit spice and baking powder. Continue stirring until a smooth dough forms (about 3 minutes). Peel and core the apples, and cut them into thumbnail-sized pieces. Mix the apple pieces into the batter. Divide the batter among 12 muffin cups. For the crumble crust, put the butter, vanilla sugar, sugar, flour, and biscuit spice in a bowl and mix by hand into small crumbles. Sprinkle these evenly over the muffin batter. Bake the muffins for about 45 minutes in a preheated oven at 170°C (top/bottom heat). Tip: Place the leftover crumble topping in a small casserole dish with another sliced ​​apple and bake for about 30 minutes. Makes a delicious crumble that tastes best warm with vanilla ice cream.
