Apple roulades

Ingredients for 2 servings:

  • 2 beef roulades
  • salt and pepper
  • 2 apples (Boskoop)
  • 1 onion(s), red
  • ½ bunch parsley
  • 2 slices of cooked ham
  • 1 tbsp clarified butter
  • 250 g tomatoes
  • 125 ml beef broth
  • 1 tbsp sour cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Season the meat with salt and pepper. Peel and core the apples, and cut them into thin slices. Finely dice the onion and chop the parsley. Place the ham on the roulades, arrange 2/3 of the apple slices, onion, and parsley on top, roll up, and secure. Brown the roulades in hot clarified butter for 5 minutes. Quarter the tomatoes and add them to the roulades along with the remaining apple slices. Pour in the broth and braise the roulades for about 75 minutes. Keep the meat and apple slices warm. Purée the stock, stir in the sour cream, and season with salt and pepper. Serve with the roulades and apple slices.
