Sweet potato stew

Ingredients for 4 servings:

  • 600 g sweet potatoes
  • 800 g potatoes
  • 2 onions
  • 2 tbsp goose fat, or clarified butter
  • 400 ml vegetable stock
  • 200 g cream
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and chop the onion. Melt the lard and sauté the onions in it. Peel the sweet potatoes and cut them into approximately 2 cm pieces. Sweet potato pieces can be a little larger, as they cook a little faster. Add them to the pot with the onions and pour in the broth and cream. Season with salt and pepper. Cook the potatoes until they are al dente and the sauce is thick. Wash and chop the parsley and mix it into the stew.
