Congri Oriental – Cuban rice dish with beans

Ingredients for 3 servings:

  • ½ onion(s), red
  • 1 clove(s) garlic
  • ½ bell pepper(s), green
  • 150 g diced ham
  • 150 g black beans
  • 250 g rice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 2 hours 5 minutes

Cook the black beans until they are slightly soft. This takes about 1.5 hours. Lightly fry the garlic, bell peppers, onions, and bacon in a little oil and season with pepper. The resulting seasoning is called sofrito. Cook the rice with the bean water (1:2 ratio) and season with salt. After about 10 minutes of cooking, add the sofrito and stir it in. Cook until the desired consistency is reached and then serve.
