- 200 g rice
- 1 can kidney beans
- 1 can organic coconut milk
- Salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Frijol con arroz – Caribbean rice with beans and coconut
Place the rice, beans, coconut milk, and a pinch of salt into the rice cooker. If necessary, add a little water to cover the rice. Cook the ingredients until the rice is tender. Stir well and serve. In Guatemala, this dish is usually served with fish, roasted chicken, meat, fried plantain, pasta salad with mayonnaise, or a corn tortilla.
