Risi Bisi with ham, peas and carrots

Ingredients for 2 servings:

  • 100 g rice
  • 100 g cooked ham
  • 2 tbsp oil
  • 60 g onion(s)
  • 200 g carrot(s)
  • 200 g peas
  • 100 ml vegetable stock
  • 2 tsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Peel and chop the carrots and onions. Heat the vegetable broth and cook the rice in it. Chop the ham, if desired. Heat the oil in a pan and fry the onions and ham. Then add the carrots and peas and fry them. Add the cooked rice, toss briefly, and season with salt, pepper, and parsley. Serve hot.
