Ingredients for 2 servings:

  • 1 large pork knuckle(s), cured
  • 8 bay leaves
  • 2 carnations
  • 4 allspice berries
  • 20 black peppercorns
  • 2 tsp, leveled sugar
  • 4 onions, quartered

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 10 minutes

Guaranteed success with instructions

Place the 10-day-cured pork knuckle in a large pot and pour cold water over it until it’s covered. Add the remaining ingredients (do not add salt, as it will taste too salty). Bring to a boil once, reduce heat, and simmer gently for 3 hours. Remove from the pot. You can use the cooking liquid to cook the sauerkraut.
