Vegan Swabian cheese spaetzle made from spelt flour

Ingredients for 6 servings:

  • 500 g spelt flour
  • 200 g spelt semolina
  • 2 tbsp egg substitute, e.g. organic premium egg substitute from Lucullus
  • 2 tsp salt
  • 1 tsp turmeric powder
  • 800 ml mineral water or tap water
  • 200 g cheese substitute
  • 3 onions
  • 4 tbsp oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Mix all the dry ingredients together and then add the water. Use a hand mixer with a dough hook, a Thermomix, or simply beat by hand. The dough should be neither too firm nor too runny. Bring a pot of salted water to a boil and use a spaetzle slicer or press to scrape or press spaetzle from part of the dough into the water. Let the spaetzle cook for about 30 seconds. Remove from the water using a sieve or slotted spoon and drain well. Place in a baking dish. Sprinkle about 2 tablespoons of grated cheese substitute on the spaetzle. Cook the spaetzle again. Sprinkle grated cheese substitute between each layer of spaetzle. Slice or slice the onions and fry in oil until golden brown. Finally, pour over the cheese spaetzle.
