Salmon in polenta and herb breading

Ingredients for 2 servings:

  • 2 salmon fillets
  • 1 egg(s)
  • 1 bowl of polenta
  • salt and pepper
  • n. B. herbs (e.g. dill, dried wild garlic, …)
  • some oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the salmon fillet into fish sticks, season with salt and pepper. Whisk the egg. Mix the polenta, a little salt, and the herbs. Coat the fish first in the egg, then in the polenta mixture, pressing the coating firmly into the surface. Heat the oil in a pan and fry the fish fillets on all sides until cooked through. The coating can, of course, be varied as desired (e.g., with chervil, garlic powder, etc.).
