Ingredients for 1 servings:

  • 250 g flour
  • 3 tsp baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 2 apples
  • 150 ml milk
  • 75 ml oil
  • possibly light jam for spreading

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix the flour, baking powder, sugar, and vanilla sugar in a bowl. Add the eggs, milk, and oil. Wash, peel, core, and finely grate the apples (e.g., using a cucumber grater), and mix well with the batter. Preheat oven to 160°C (convection oven). Divide the muffin batter among the greased muffin cups and bake for 25 minutes. This makes about 12. If you like, you can spread the muffins with light jam once they’re done. It also tastes delicious.
