Ingredients for 4 servings:

  • 340 g cherry(s), from the jar
  • 250 g quark, 20% fat
  • 125 g whipped cream
  • some sugar, depending on the sweetness of the cherries
  • some lemon peel, finely grated
  • 2 tbsp cherry brandy
  • 1 tbsp cornstarch
  • 120 g biscuits (chocolate cookies)

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Whisk four tablespoons of cherry juice with the cornstarch until smooth. Bring the cherries to a boil, stir in the cornstarch, and simmer briefly. Let cool. Mix the quark with the lemon zest and a little sugar, then chill. The lemon flavor will intensify as it infuses itself. The amount of sugar should be adjusted to the sweetness of the cherries; this can vary greatly. Whip the cream until stiff and fold into the quark, season with kirsch to taste. Crumble or roughly chop the cookies. Layer them in glasses like this: cherries, top with the quark cream, and then the cookie crumbs.
