Meatballs, Greek style, on a bed of vegetables

Ingredients for 1 servings:

  • 100 g minced meat, lean beef
  • ½ small onion(s), 20 g
  • 1 pinch(s) of oregano and 1 pinch of allspice
  • 1 tsp Parmesan, grated
  • 300 g mixed fresh vegetables (e.g. zucchini, tomatoes, eggplant)
  • 3 olives, black
  • 1 garlic clove(s)
  • 30 g tomato paste
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thoroughly knead the ground meat with finely chopped onion, oregano, allspice, salt, pepper, and Parmesan cheese. Form the dough into 4 balls and let rest for a while. Meanwhile, cut the vegetables into pieces. Brush an ovenproof dish with oil. Chop the olives and garlic, mix with tomato paste and a little water, and season with salt and pepper. Arrange the vegetables in the dish, pour the sauce over them, and finally, arrange the meatballs on top of the vegetables and sauce. Cook in the oven at 200 degrees Celsius for 30 minutes or in the microwave at 600 watts for 6 minutes. Stir the vegetables once halfway through cooking and turn the meatballs over.
