Pollock fillet with bread crust

Ingredients for 4 servings:

  • 4 pollack fillets (Köhler) approx. 150g each
  • 1 small lemon(s), the juice and the grated peel
  • n. B. Salt and pepper from the mill
  • 100 g herb butter
  • 100 g bread chips, e.g. herb flavor
  • n. B. Grease for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Grind the bread chips in a food processor and mix with the herb butter and grated lemon zest. Drizzle the pollock fillet with lemon juice and season with pepper. No salt is necessary, as the bread chips are already quite salty. Place the fish fillet in a coated or greased baking dish and top with the bread and herb butter mixture. Bake in a preheated oven at 180°C for 15-20 minutes. Serve with mashed potatoes and peas.
