Ingredients for 4 servings:
- 1 vanilla pod(s)
- 100 g sugar
- 120 ml water
- 4 peaches
- 1 pinch of salt
- 2 tbsp butter
- some basil
- Ice cream, vanilla

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
a very tasty accompaniment to vanilla ice cream
Split the vanilla pod lengthwise, scrape out the seeds, and add both to the sugar. Mix well. Bring the water to a boil in a non-stick pan, add the sugar and vanilla pod, and simmer over low heat for about 10 minutes. Remove the vanilla pod. Peel the peaches, dice them, and add them to the syrup with a pinch of salt. Simmer for about 3 minutes. Remove from the heat and stir in the butter and sliced basil leaves. Serve warm on dessert plates and serve immediately with a scoop of vanilla ice cream.
