Pork fillet with apple and onion

Ingredients for 3 servings:

  • 600 g pork fillet(s)
  • 2 large onions
  • 1 large apple
  • 2 tbsp mustard
  • salt and pepper
  • 3 tbsp clarified butter
  • 2 tbsp butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the meat into approximately 3 cm thick slices and flatten. Season with salt and pepper, and spread with mustard. Slice the onions into thin rings. Wash, core, and slice the apple into thin wedges. Sauté the onions and apple slices in clarified butter until softened, then keep warm. Sear the fillet in the frying fat until browned. Add butter, reduce the heat, and cook with the lid on for about 3 minutes. Add the apple and onion mixture and cook, covered, for another 2 minutes.
