Ingredients for 4 servings:
- 450 ml milk
- 1 banana(s), very ripe
- 4 tbsp sugar, more or less if desired
- 40 g cornstarch
- 1 vanilla pod(s)

good use of leftovers for overripe bananas
Mix the cornstarch with 2 tablespoons of sugar and 5-6 tablespoons of cold milk until smooth. Purée the bananas with the remaining milk using an immersion blender. Scrape out the vanilla pod, add the seeds, the whole pod, and the remaining sugar to the banana milk, and bring to a boil, stirring constantly. Then remove the milk from the heat, remove the pod, and stir the cornstarch into the banana milk. Bring back to a boil briefly and pour the pudding into serving glasses or a large bowl (be careful to rinse glass bowls with cold water beforehand to prevent them from bursting). Let cool (preferably in the refrigerator) and serve. Enjoy on its own or with whipped cream and/or chocolate sprinkles. The amount of sugar depends on the sweetness of the bananas and your personal taste, so be sure to season to taste. If you prefer it even more vanilla-flavored, you can add a packet of vanilla sugar.
