Filled Nutella cookies

Ingredients for 1 servings:

  • 400 g flour
  • 100 g powdered sugar
  • 100 g butter, room temperature
  • 1 lemon(s), grated peel
  • 2 eggs
  • 1 packet of baking powder
  • Nutella, amount as required
  • 2 egg yolks
  • Hazelnuts, chopped, quantity as required

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 58 minutes

Children love these cookies

Sift flour and powdered sugar into a bowl. Add butter, lemon zest, eggs, and baking powder and knead everything into a smooth dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes. Roll out the dough on a floured work surface to a thickness of about 2.5 mm. Use a cookie cutter to cut out circles about 6.5 cm in diameter. Place a teaspoon of Nutella in the center and place a second cookie on top. Seal the edges tightly so the Nutella doesn’t leak out during baking. Brush the cookies with egg yolk and sprinkle with chopped hazelnuts. Line a baking tray with baking paper and place the cookies on top. Bake in an oven preheated to 180°C for about 8 minutes. If you don’t like Nutella, you can also use jam. The hazelnuts can also be replaced with sugar.
