Cod parcels wrapped in ham

Ingredients for 2 servings:

  • 400 g cod fillet(s)
  • 4 slice(s) ham, raw, mildly smoked
  • 100 g shallot(s), chopped
  • 1 tsp mild mustard
  • 1 tsp marjoram, dried
  • 50 ml sherry
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the shallots in a little oil and deglaze with sherry. Simmer for about 5 minutes, adding a little water if necessary, add the marjoram, reduce for a further 2 minutes and season with a little salt (be careful with the ham!) and pepper. Place two slices of ham on top of each other, overlapping, and scatter the sautéed onions on top. Halve the cod fillet, season with pepper and spread with the mustard. Place the fish fillets on the ham and wrap them in the ham. Place the rolls in a greased baking dish, drizzle with a little oil and bake as follows: 190°, 50% humidity, 8 min 150°, 70% humidity, 8 min Goes very well with sauerkraut with boiled potatoes or mashed potatoes. Served with a cream and white wine sauce.
