with apples, cinnamon, raisins and almonds
For the base, cream together 175g butter and 175g sugar. Beat in four medium eggs one at a time. Mix together 350g flour, three teaspoons of cinnamon, and half a sachet of baking powder, sift through, and then stir in alternately with 100ml of milk. Pour the batter into a greased and floured springform pan (26cm diameter) and bake at 175°C for about 45 minutes. For the filling: Peel, quarter, core, and roughly dice 1kg apples. Mix five tablespoons of apple juice with two sachets of vanilla pudding powder. Bring 350ml of clear apple juice and two teaspoons of lemon juice to a boil, add the diced apples, and simmer for about five minutes. Then add the mixed pudding powder while stirring and bring to a boil. Fold in 50g each of raisins and slivered almonds. Once the cake is baked and cooled, cut it in half horizontally and place a cake ring around the bottom layer. Pour the apple mixture over the cake, replace the top layer, and chill for about an hour. Finally, whip 250g of whipped cream with a sachet of vanilla sugar until stiff peaks form. Spread the cream over the cake and garnish with cinnamon stars. Sprinkle a touch of cinnamon over the cake.
