World's best nut and carrot cake

Ingredients for 1 servings:

  • 500 g carrot(s)
  • 500 g hazelnuts, ground
  • 4 tsp, leveled baking powder
  • 8 eggs
  • 3 tbsp orange juice
  • 1 orange(s), untreated, grated peel
  • 300 g sugar
  • 150 g dark chocolate
  • 12 marzipan carrots

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Peel and finely grate the carrots. Mix the hazelnuts with the baking powder. Beat the egg yolks with the orange juice and grated zest until thick and foamy, then fold in the sugar. Beat the egg whites until stiff peaks form, gradually fold them into the egg yolk mixture, then fold in the hazelnuts and finally the carrots. Grease a springform pan approximately 28 cm in diameter and pour in the batter, smoothing it out. Bake in a preheated oven at 200°C for approximately 50 minutes. After turning the cake out and letting it cool, spread it with the chocolate heated in a water bath and garnish it with marzipan carrots, if desired.
