Beef with potatoes and curry sauce

Ingredients for 4 servings:

  • 500 g roast beef (pot roast)
  • 4 m.-sized potatoes
  • 2 m.-sized onion(s)
  • 1 can coconut milk
  • 3 tbsp curry paste
  • 4 tbsp brown sugar
  • 4 tbsp fish sauce
  • 2 tbsp lemon juice
  • 3 tbsp peanuts, roasted
  • 1 bay leaf
  • n. B. water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the meat of fat and tendons and cut into goulash-sized cubes. Peel and quarter the potatoes. Peel and halve the onion. Pour 5 tablespoons of the thick coconut milk into a large pot and bring to a boil. Stir in the curry paste and cook for about a minute. Add the beef with the remaining coconut milk, brown sugar, fish sauce, lemon juice, peanuts, bay leaf, and 1/2 liter of water. Simmer over low heat with the lid slightly ajar for 50 minutes. Add the potatoes and onions and simmer for another 40 minutes.
