Chinese noodles with vegetables and ham

Ingredients for 4 servings:

  • 300 g Chinese egg noodles
  • salt water
  • 200 g soy sprouts, fresh
  • 2 spring onions
  • 3 cloves garlic
  • 50 g ham, raw
  • 3 tbsp oil (peanut oil)
  • 2 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the noodles in salted water according to the package instructions, then rinse and drain. Briefly rinse the bean sprouts in hot water. Trim the spring onions, halve them lengthwise, wash them, and cut them into approximately 3 cm long pieces. Peel and finely chop the garlic. Cut the ham into small cubes. Heat peanut oil in a pan. Fry the garlic and ham over medium heat for about one minute. Stir in the noodles and fry for another minute. Add the bean sprouts, spring onions, fish sauce, oyster sauce, and sugar, mix everything thoroughly, and cook just until the ingredients are hot. The bean sprouts and spring onions should still be crunchy.
