Ingredients for 1 servings:

  • 250 g flour
  • 3 tbsp cocoa powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s) or equivalent egg substitute powder
  • 90 g sugar
  • 1 packet of vanilla sugar
  • 80 ml vegetable oil
  • 280 ml milk or soy milk
  • 150 g chocolate flakes, possibly vegan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Very moist, soft, chocolatey muffins that can also be made vegan! Makes 12.

Makes 12 muffins. Preheat the oven to 180°C (top/bottom heat). Combine the flour, cocoa powder, baking powder, and baking soda. In a second bowl, whisk together the egg (or egg substitute), sugar, vanilla sugar, oil, and milk. Then, combine the contents of both bowls until all ingredients are moistened. Finally, add the chocolate chips and stir in. Divide the batter evenly among muffin cups and bake in the oven for 25-30 minutes. The muffins are delicious warm or cold.
