Ingredients for 12 servings:
- 2 eggs
- 100 g sugar
- 100 g margarine (semi-skimmed)
- 150 g natural yogurt (1.5%)
- 2 bananas, approx. 200 g
- 250 g flour (type 405)
- 2 tsp baking powder
- ½ tsp baking soda
- 1 pinch of salt
- 100 g chocolate sprinkles
- 5 g margarine (half-fat) for the mold
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Preheat the oven to 160°C (fan/convection oven). Grease the muffin tin and chill. Whisk the eggs in a bowl and stir in the sugar. Mash the bananas with a fork. Stir the margarine, yogurt, and banana puree into the egg mixture. Add the flour, baking powder, baking soda, salt, and chocolate sprinkles to the egg mixture. Gently mix until a smooth batter forms. Pour the batter into the muffin tin and bake for about 25 minutes.
