My coconut muffins

Ingredients for 1 servings:

  • 240 g flour
  • 100 g sugar
  • 1 tsp, leveled baking powder
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 60 ml vegetable oil
  • 125 ml milk
  • 40 g desiccated coconut
  • 2 ladyfingers
  • Desiccated coconut for sprinkling
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 6 to 8 pieces

Combine flour and baking powder in a bowl. Add sugar, vanilla sugar, egg, oil, and milk and stir until the dry ingredients are moistened. Don’t overmix, or the muffins won’t rise properly. Spoon half of the batter into 6-8 holes in a greased muffin tin. Sprinkle with desiccated coconut. Break the sponge fingers into 6-8 pieces and place them on top of the desiccated coconut. Spread the remaining batter on top. Sprinkle with more desiccated coconut, if desired. Bake in a preheated oven at 180°C for about 20-30 minutes.
